Made a pound just to try, and it was gone in two days. Next time I am going to try to cut the pieces a little thicker. I find the thin pieces were a little tough. A source that we trust (Pacific Northwest Extension) says up to 1-2 months in an airtight container at room temperature, even without the preservatives. However, the National Center for Home Preservation at the University of Georgia says 2 weeks.
