Yes, I imagine you could use frozen potatoes instead! I haven’t tested the recipe with them, so I don’t know how/if it would change the cooking time. Frozen potatoes are usually parboiled, so it might not actually change the time at all (assuming you start from frozen and don’t defrost them first). But you could always open the packet to check on them, then reseal and put it back over the fire if needed.
