After the 10 minute natural decompress I released pressure. There was barely a sputter. When I pulled the pork out of the pot it was very tough still, very little collagen had converted. I’m putting back in for another 20 but now that’s it has depressurized and cooled a little I’m really worried the whole thing’s a loss.

Which is really weird. I made a double batch last week and it came out perfect. Does size of the instant pot matter here for cook time? The text says no, but…

I slather the full cut of pork with mustard then roll in season wrap and refrigerate over night.
I put the full piece in pot without browning or cutting and it was amazing.
Just shortcut due to time schedule
