Thanks for the feedback, Sue! My guess is that the sauce has different sodium levels depending on the brand. We’ll have to adjust the recipe to be “salt to taste.”

We had some leftover fresh corn that I added to the other veggies. We will definitely try this again. 2 tsp of salt sounded like too much so I cut back to 1 tsp and it was still a bit salty for us but I know everyone’s tastes are different!5 stars

We make these with corn tortillas BUT, we cheat. I recommend you skip the rolling, quarter the tortillas, and layer them into a casserole with the other ingredients. That’s the only change we make. We LOVE this recipe.5 stars

20 minutes at an oven temp of 375 F seems to be the consensus for enchiladas. You’re really just melting the cheese and bringing all the flavors together. All the ingredients should either be pre-cooked (chicken, thickly sliced peppers) or doesn’t need to really be “cooked” (like black bean, cheese, cilantro)
