Hi Elizabeth! Thanks for the question; food safety is so important! The reason this is OK to dehydrate at 145°F is because the meat is already fully cooked before dehydrating. This is info we’ve gotten straight from trusted sources like the National Center for Home Food Preservation and the USDA.

I am slightly concerned that the recipient says to dehydrate a 145 degrees F. I have read that the safe temperature to dehydrate meet is 155 F. Is 145 degrees safe?
